Why do I need to choose an ingredient?

A cup of flour and a cup of honey weigh very different amounts, so turning a volume (like cups or millilitres) into a weight (like grams) needs to know what you are measuring. Volume-to-volume and weight-to-weight conversions are the same for every ingredient, so the choice only matters when you cross between the two.

How accurate are the gram amounts?

They use widely-used kitchen reference weights (for example 1 cup of all-purpose flour ≈ 125 g, 1 cup of granulated sugar ≈ 200 g). Real ingredients vary with how tightly they are packed and the humidity, so treat the grams as a close guide rather than a lab measurement — for baking, a kitchen scale is always most precise.

Are these US or metric cups and spoons?
